It’s hard to believe we are already in our 5th Christmas season at the Genesee Country Inn. RJ and I have enjoyed every minute of family, guests, and friends during this glorious and blessed holiday.  This month is proving to be busy with guests visiting the Genesee Country Village and Museum for Yuletide in the Country.  More guests are arriving to visit family and friends.  We are hosting a Christmas party for the Scottsville Rotary later this month and a family gathering right after Christmas Day.  All the preparation, only to be over way too soon. RJ put the spotlights out this week and tomorrow we are putting up all 3 trees as we continue to decorate the Inn.  All the windows will have a wreath in place with a candle in the window.  She always looks so beautiful at this time of year.  The snow will only add to the beauty of the season. 

Fortunately, the weather has been mild, so hanging decorating has not been difficult.  Tomorrow the garland will wrap the outside emergency stairway and the posts to the sign. At this time of year after the sap gathering season is over and the maple syrup is ready to use, guests at the Genesee Country Inn enjoy a homemade maple cake made with maple syrup made right here at the Inn.

Maple Sour Cream Cake

1 egg
1 cup maple syrup
1 cup sour cream
1 teaspoon of vanilla
1 1/2 cups of all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt

Sift flour, baking soda, and salt. Set aside. Beat egg thoroughly, add maple syrup and continue beating. Add sour cream alternately with flour mixture. Add vanilla, stir well and turn into a greased 9 inch square pan. Bake at 350 degrees for 25-30 minutes. Serve plain or frosted.

I serve this delectable cake with maple flavored frosting. Delicious!!

At the Genesee Country Inn Bed and Breakfast, there is nothing like the delicious smell of homemade blueberry muffins fresh out of the oven early in the morning for breakfast. This recipe is quick, easy, and fool-proof. Make them once and you will never go back to store-bought muffins again.

Preheat oven to 400 degrees.

1 3/4 cups sifted all-purpose flour
1/4 sugar
2 1/2 teaspoons baking powder
3/4 teaspoons salt
1 well-beaten egg
3/4 cup milk
1/3 cup canola oil
1 cup fresh or frozen blueberries

Sift dry ingredients into a bowl. Combine egg, mok, and oil. Add all at once to dry ingredients. Stir until ingredients are moistened. Fill muffins pans 2/3 full. Bake at 400 degrees about 25 minutes until golden brown. Makes 12.
